Did you know about Acorns?
Acorns are one of the healthiest nuts around. I discovered them about a year or so ago after reading an article in Backwoods Home Magazine. I knew the deer ate them and loved them. Never thought I could eat them. Apparently, they are great for helping to control blood sugar levels. And have a wide variety of uses. Some oaks produce acorns with a lot of tannin which makes them bitter. We have a lot of white oaks and water oaks here at Whisper Wind, which tend to have less tannin. Processing acorns is not that difficult and can be done in any kitchen. So start checking the yard and identifying your oaks.
