Tuna Casserole

Ingredients:
3 tbls. butter
1/2 large onion chopped
1 stalk celery chopped
3 tbls. flour
1/2 tsp. salt
1/8 tsp pepper
1/8 tsp. curry
2 cups milk
1 can tuna
1 cups frozen peas and carrots
5-6 medium biscuits uncooked

Directions:
melt butter in a saucepan and add onion and celery. cook for about 5 minutes then mix in flour, curry, salt and pepper. cook stirring constantly until mixture is smooth and bubbly. gradually add milk stirring constantly until sauce thickens and bubbles. Stir in tuna and veggies and heat to the boiling point, continuing to stir. Then transfer mixture to 1 1/2 quart baking dish, place biscuits on top. Bake at 400 degrees for about 20 minutes or until biscuits are brown. This recipe is for 4 servings, so if your family is larger then you might want to double it.
