Back Porch Soup

This is a really hearty and filling soup.

Ingredients:
1 lb. ground meat, browned and drained *
1 medium onion copped fine, sauteed with meat
1 pkg. taco seasoning**
1 oz. pkg dry ranch dressing mix

*Because this soup is loaded with beans I only use 1/2 pound of ground meat. Save the other 1/2 pound for another meal.
**if you don't have taco seasoning don't run to the store just for that, you can use some chili powder and cumin and salt and come up with a close substitute

Add to the meat mixture in a crockpot:
1 can kidney beans or 2 cups cooked dry
1 can whole kernel corn or 2 cups frozen
2 cans pinto beans or 4 cups cooked dry
1 can diced tomatoes
1 can Rotel brand tomatoes *

* my children don't like things too spicy and the Rotel can add a kick when combined with the taco seasoning. So I only use 1/2 a can and save the other 1/2 for something else. If you won't be using it for awhile you can place it in a small jar and stick it in the freezer, just remember to label it so you know what it is.

Directions:
Don't drain your cans of beans and if you are using beans that you cooked from dry beans then you will need to add about 1 cup of water to the stew. Add all ingredients to the crockpot and cook on low for about 6 hours. Serve over fritos with grated cheese and sour cream on top. Add some cornbread on the side and some celery sticks and you have a good wholesome meal cheap and easy.
