Keeping Mayonnaise without refrigeration

We have been conditioned to think that mayonnaise will spoil if not refrigerated. This simply is not completely true. Mayonnaise that has come into contact with other food will spoil if not refrigerated. However, mayo that is kept clean and does not come into contact with other food will last for quite some time without being refrigerated. So the key to mayonnaise is to keep the mayo in the jar clean and noncontaminated. This means that you cannot use a knife and spread the mayo on the bread and then put that same knife back in the jar. The mayonnaise in the jar must have absolutely no contact with any other food of any kind. It will spoil quickly if it does. So when stocking up your mayonnaise supply you might want to buy smaller jars that will last unrefrigerated and be used within a week's time. Your mayo will be fine if clean and uncontaminated and will be used up before it has a chance to go bad.
